So many types of food are prepared a day before in preparation for Shitala Mata Puja, like pakoras, sweet rice, curry, churma, besan chakki, puri, halwa etc. After offering these foods to Mother Sheetala, a cold meal is eaten with the family.
Here’s how to make these special dishes
Puri
Ingredients: 1 bowl wheat flour, 1 tablespoon gram flour, 1/2 teaspoon celery, salt as per measurement, half teaspoon turmeric, oil (for frying).
Method: First sift the wheat flour, mix all the ingredients except oil to form a stiff dough. Now cover with a cloth and keep for 15-20 minutes. Then prepare to bake. Heat oil in a pan and fry crispy puris on low flame and once cool offer these puris to Goddess.
Mix dal halwa
Ingredients: 100 gm chickpeas, 100 gm magni dal, 50 gm red lentils, 50 gm soybeans, 250 gm sugar, 1/2 tsp PC Elchi, 150 gm desi ghee.
Method: First clean all the grains. Then wash and leave for 2-3 hours. Drain the water from the boiled lentils and grind them in a mixer. Add 1 cup of water to the sugar and boil until syrup forms. Keep the prepared syrup aside. Now heat ghee in a pan. Add water and stir on low heat. When fragrant and the lentils are fried well, add the syrup and stir. Now grind cardamom in it. Now take it down and let it cool. Enjoy delicious mixed dal halwa.
Galya rice
Ingredients: Basmati rice 1 vat, sugar 1/2 vat, 1/2 teaspoon cardamom powder, 5-7 saffron, 1 spoon sweet turmeric, 1 spoon ghee, 2-3 cloves, Samareli dry fruits, 15-20 raisins.
Method: Soak the galia rice for an hour before making it. Now boil water in a big pot. Steam the rice and keep it on a plate to cool. On the other hand, make a syrup of one and a half sugars. Stir the cooked rice in it for a while. Now add cardamom and color to it. Heat ghee separately in a pan, add lovage to it and mix with rice. Add finely chopped dry fruits and fried raisins to it, mix well and serve galio bhat.
Malpua
Ingredients: 1 cup milk, 1 cup flour, 1 cup sugar, 1 teaspoon lemon juice, 1 tablespoon curry, oil (for frying), finely chopped pistachios and almonds.
Method: To make Malpua first place flour in a bowl. Now mix it well with oil. When the oil is well mixed in the flour, mix milk and curry leaves to make a thick paste. Heat sugar, lemon juice and water in a pan to make a syrup. On the other hand heat a pan with oil on gas. When the oil is hot add the flour paste. Once it is cooked well, take it out of the oil and soak it in the prepared syrup and leave it for a while. Then take it out of the syrup and sprinkle roasted pistachios and almonds over it and offer it to Mother Goddess.
