How to make almond peda
Almonds: 1 cup (peeled)
Milk: 1/4 cup
Ghee: 2 tbsp
Sugar: 1/2 cup (or as per taste)
Elchi powder: 1/2 tsp
Saffron: 1 tsp (as desired)
Pistachios: For garnish
Prepare almond paste
First make a smooth paste by mixing almonds soaked overnight in milk. Do not make this paste too thin.
Cook the mixture
Now heat ghee in a pan and add almond paste to it. Stir continuously on medium heat until it turns light golden in color and the ghee starts to separate.
Add sugar
Now add sugar and mix it well. After sugar melts, add cardamom powder and saffron. Cook until the mixture thickens and starts to separate from the sides of the pan.
Paddle shape
Now take this mixture off the heat and let it cool a little. Apply pure ghee on your palms and shape this mixture into a small tree. Place a piece of pistachio on each peda and press gently.
Serve chilled
Now you can cool these plants by keeping them in the fridge. Serve when peda is completely cooled.
