Method of thickening
To make clock, first boil mawa in a pan on gas. When the ghee starts to separate from the mawa, drink the sundhi sha. When the mawa is evenly cooked, transfer it to another vessel. When the besan becomes fragrant and turns golden brown, add the chopped almonds and pistachios and fry the mixture for two to three minutes after coating the almonds and pistachios and keep aside until it cools completely.
When the stuffing mixture is completely cooled, shape the stuffing into a small ball of round cookie cutters by adding powdered sugar and making stuffing ghari.
Coating method for Gharina pads
Take all purpose flour in a bowl, add one to two spoons of semolina to the flour and when the flour and semolina are evenly mixed add water little by little and make a medium soft dough. Once the dough is kneaded, add a spoonful of ghee to it and now make enough lua to make the puri and make a medium thin puri. (While frying the puri, keep in mind that the puri should not be too thick and not too thin because if the puri is too thick, it will remain raw from inside and if it is too thin, it is likely to be fried. Once the puri is ready, make a luva of dhari mixture in it, put it in the center of the puri and close it from one side (we make aloo paratha, the same way we close the luva of the parata after stuffing it. Do the same to close the puran, clock).
Close the clock well from all sides, remove the excess dough left on top and press the edge with your finger from where the excess dough has been removed, so that the floating clock does not come loose, thus preparing all the clock. Now heat ghee in a pan on gas and add ghee one by one and fry for two-three minutes, thus make all the ghee.
